I have been asked by Katherine ( Ilovemycookie ) to share my recipe with you all for Tia Maria, this was given to me years ago by a lovely old man who worked in the same accounts office as me...No wonder I had trouble balancing me ledger's after suppin this Here's me recipe , I am making mine during the week,,,,,so may not get online for a day or two..Hic !! Don't think Katherine will be around much either
This is the original recipe given to me.
Half a bottle of RUM ( approx 13 oz ) 1 Cup of hot water 1 Cup of brown sugar ( demerrara or darker sugar ) 2 Desserspoons liquid coffee essence ( or use bottled Camp coffee ) 2 Teaspoons Glycerin 1 Teaspoon vanilla essence.
Desolve sugar in hot water, add all other ingredients and mix well. ** Add extra coffee or rum to your own taste.**
***I make up double all this*** I use a full bottle of a cheaper dark rum ( don't buy spiced rum, just plain navy rum ) so I end up with plenty of Tia Maria, so just double all the other ingredients. Pour carefully in bottles, keeps well in a cool place or you can chill in the fridge...Mine doesn't last long enough to go "off"

This is a good way to use up empty spirit bottles...fill 'em up again with something tasty...........Re-cycling at its best.

Katherine XXX Hi Katherine, You have the correct ingredients, Glycerin is what gives it a smoothness, its doesn't really taste of much on its own and often used in Royal Icing to stop it going rock hard when dry. I added a little extra coffee and extra spoon of vanilla to mine...You just need to keep tasting when you have mixed all together....that's the best part of this recipe I used a medium size mug to measure water which needs to have just boiled and added to sugar and stir well until dissolved, then add all other ingredients.
